Baked Cod with Salsa

Salsa must be one of my favorite condiments.  The only thing better than salsa is fresh, home made salsa.  The first time I decided to try salsa with cod I thought the salsa would overwhelm the cods delicate flavor.  I couldn’t have been more wrong.  This dish is light, filling, and fun.  I hope you enjoy it as much as my wife and I do.


For the salsa you will need:

2 large jalapenos

1 poblano pepper

1/2 of a red onion

4 medium tomatoes

2-3 cloves of garlic

1 handful of cilantro

the juice and zest of one lime

Dice up the jalapenos, poblano, red onion and tomatoes and mince the garlic.  Give the cilantro a rough chop and combine these ingredients into a bowl.  Add the lime juice and zest and toss until well combined.  Put the bowl in the refrigerator and allow all of those wonderful flavors to mingle for about 20 – 30 minutes.

For the cod you will need:

approximately 1 lb of cod

2 TBS olive oil

salt and pepper to taste

Preheat your oven to 400 degrees Fahrenheit.  Cover a cookie sheet with foil.  Brush the foil with 1 tbs of olive oil.  Cut the cod into the desired portions.  Place the cod on the cookie sheet and brush with olive oil.  Salt and pepper to taste. Place into the oven for 15 to 20 minutes or until the fish is firm and flakes easily.  Remove the cod, plate it and cover with the desired amount of salsa.

One of the great things about this recipe is that there is a lot of left over salsa for chips, wraps, burgers, chicken, pork… well you get the picture.  Salsa goes with everything.
