Chili and Garlic Aioli

Garlic aioli or garlic mayo is a recipe that has been passed down in my family over the generations. I decided to see what would happen if I changed up the garlic mayo and add some spice. I can only say it was a great success. Garlic mayo will always have its place in my heart as the family recipe, but I think this new recipe will have to be passed on as well. I hope you enjoy.

5 egg whites
5 cloves of garlic, minced
1 small Trinidad scorpion pepper, minced
1 tsp. lemon juice
Approximately 1/2 cup olive oil

Put the egg whites, garlic, pepper, and lemon juice into a blender. Turn the blender onto the highest speed it allows. Slowly drizzle olive oil into the blender until it thickens to the consistancy of mayonnaise. Place the aoli into a bowl and cover with saran wrap. Place into the fridge for approximately an hour.

It truly is that easy, and it is one of the most delicouse spreads you will ever have. You can use what ever chili you want. It all depends on what heat level you are looking for.
