Sausage and Peppers

Who doesn’t like sausage and peppers?  This recipe always reminds of the boardwalk at the Jersey shore.

Sausage and Peppers

1 pound sausage (hot or mild)

3-4 large peppers (any kind you like)

1 large onion

1 tbsp olive oil

Cut sausage to 4 – 6 inch pieces.

Place saute pan under medium high heat and add 1 tbsp of olive oil.  Once it is shimmering add the sausage and brown on all sides.

While sausage is browning slice your peppers and onions.

Once the sausage is browned on all sides place on a foiled lined baking sheet and place in a 350 preheated oven for 20 minutes to cook through.

Add your peppers and onions to the still hot pan and saute in all that wonderful sausage flavor until tender.

Once sausage is finished prep rolls and place sausage and peppers piled high.
